My very first blog!

I did it. I finally did it.

I had been thinking about starting a blog for quite some time but I just never got around to it.
Shocker.

But the other week I twisted my knee (more on that later) so I've been spending a lot of time with my leg propped up in bed and my face glued to my laptop.
It started with stalking everyone I've ever met on Facebook, which then led to planning my non-existent wedding on Pinterest and then I fell deep, deep into the black hole that is YouTube.

If you don't know what Prancercise is, your life is incomplete. Trust me on this.

But I'm getting sidetracked...

Between three jobs, going to school and attempting to have a social life - my days can get a little hectic. So I wanted to start a blog to combine all of my favorite things. Tasty recipes, clothes, things that make me laugh, crafts, my dog's crazy antics and other random stuff that goes on in my life.

If you don't know me, I work as a teacher's assistant at an elementary school and I absolutely love it. The kids can be a little crazy, but they make me laugh every day and always keep me on my toes. I am still going to school (part time) so that I can eventually have my own classroom and assistant. Even though I get tired of juggling work and school, I'm thankful for all the experience I'm getting along the way. By the time I have my first group of kiddos to teach, I feel like I'll be able to handle any crazy that is thrown my way.

That being said - IT'S SUMMER!!!

My absolute favorite time of the year! Flip flops, sundresses, lazy days at the beach, sleeping in, kayaking, drinking cold beer outside with friends - I could go on and on about all the reasons why I love summer. Unfortunately, about 2 1/2 weeks in to this summer, I twisted my knee. : ( The first Doctor I saw said she thinks I tore a ligament so now I'm on crutches and waiting to go see an Orthopedist on the 10th. Fingers crossed it isn't anything too serious and I'll just need more rest and at the most some physical therapy. But for now, this has been my view

I'm making an effort to not let the crutches or awesome knee brace slow me down too much, though. Justin (the boyfriend) and I went to a shrimp boil last Friday night at a friend's house and it was my duty to bring dessert. Naturally I started searching Pinterest for a quick and easy dessert that could be eaten outside with little to no mess. Which is how I came across Onderland or Bust and her Strawberry Shortcake Kabobs recipe.
YUM.
I used her recipe as starting point, but my knee pain and a bad case of the lazies made me resort to shortcuts. So if you want something a little more homemade (and probably healthier) then you might want to stick with hers. Anyways - holy cow, these turned out so good. They literally took minutes to prepare but looked and tasted amazing! I didn't take pictures during the process (Can you tell I'm new to blogging?) so all I have this time is the end result. Oh well!

What you need:

Shish-kabob sticks
2lbs fresh strawberries (washed and cut into bite sized pieces)
Pound Cake (Thanks, Sara Lee!)
Melting chocolate (I used Baker's melting chocolate)

Directions:

1. Cut strawberries and pound cake into bite size pieces
2. Alternate strawberries and pound cake pieces on kabob sticks, place on tinfoil or wax paper
3. Heat chocolate according to package directions and drizzle it all over your kabobs
4. Let chocolate harden (you can stick them in the freezer for a minute or two to speed this up)
flip and repeat #3
5. Serve your kabobs and listen to everyone talk about how amazing they are


All in all, I was extremely pleased with how these turned out. Quick, easy, cheap and tasty - I couldn't really ask for a better dessert! I hope you enjoy them too!

Well, I have a lazy pup cuddled up next to me so I think I'm going to call it a night. I'm pretty excited about this whole blogging thing, so hopefully I'll keep it up and people will actually read it! : )
